The reason is that there is a chance of possible residue buildup that can cause bacteria. Our Water Service Technician sanitizes the reservoir and spigots etc., then, the water is turned on. It goes through the water filtration system that was checked, filters changed (if need be) and into the sealed air tight reservoir and is never touched by human hands thereafter, until the next service call.
